So it’s finally YULE – The Winter Solstice!
I know I wrote yesterday about it but since we celebrated a day early, I thought I would share our celebration pics.
I made beef stew for the family and chicken for myself (I don’t eat red meat) with a side of Yorkshires (English popover –yummy family tradition!). I also made – with my son’s help- a Yule log cake!
It was the first time I ever made a jelly roll type of cake and it was a success. We made a chocolate cake with vanilla ice cream inside. Spreading the ice cream was tricky since you have to soften it first. There is definitely an art to softening ice cream. It’s either too frozen or soup. Trying to spread it onto a ¾” thin cake without destroying it was a little difficult. At first it was too hard to smush around and then of course I over nuked it and poured the rest on the cake and just rolled it up so the ice cream soup squished out. It came out just fine though after sitting in the freezer for an hour or three.
We chose and burned a small log to celebrate the return of the Sun and my dog watched it all by our tree. Good luck Santa!
